* 330g pre cooked beetroot – diced
* 1 shallot, finely sliced
* 100g feta crumbled into chunks
* 2 tbsp Mellow Yellow Balsamic Dressing
1) Simply place your diced beetroot in a mixing bowl, add the sliced shallot and drizzle over 2 tbsp Mellow Yellow Balsamic Dressing, then toss to mix thoroughly.
2) Transfer to your serving dish and sprinkle with the crumbled feta.
