A really easy, moist fruity apple cake. A perfect way to use up apples(cookers or eating apples) whichever you have in the garden or the fruit bowl.
2 eggs
200g sugar
2 tsp (heaped) cinnamon
½ cup/120ml Mellow Yellow Rapeseed Oil
6 apples
275g plain flour
2 tsp baking powder
Preheat oven to 180°C and grease and line two 9 inch round tins.
Mix the eggs, sugar, cinnamon and oil in a bowl. Peel and chop the apples (into approx 3cm pieces), adding them to the wet mixture – making sure they are coated to keep their colour. Mix the baking powder thoroughly into the flour, then add them to the wet ingredients in the bowl and mix well.
Pour mixture into the tins and bake for approximately 55 minutes. Delicious served with crème fraiche or ice cream. This will also freeze well so you can eat one, and save the other!
