Asparagus, Salmon and Avocado Bruschetta

A simple little dish which is full of all the good stuff, especially flavour. It doesn’t take long to put this one together at all. Asparagus, Salmon and Avocado Bruschetta, another winning meal.


Bloomer shaped bread
Mellow Yellow Rapeseed oil
Sliced avocado
Steamed cooled asparagus
Salad leaves
Mellow Yellow Honey and Mustard Dressing
Chopped chives


On a baking tray place sides of bread, lightly brush each side with Mellow Yellow Rapeseed Oil and season with salt. Bake at 200ºC for around 8 minutes turning once. Then allow to cool.

Dress the plates with salad leaves and place the bruschetta on top. The arrange the smoked salmon, sliced avocado and asparagus. Dress with Mellow Yellow Honey and Mustard Dressing. Finish with a generous sprinkle of chopped chives.
