Anyone can enjoy a delicious pizza using our tasty Vegan Pizza recipe. With hummus and roasted vegetables, this vegan pizza is full of flavour and a great way to use up leftover homemade hummus or the last portion of roasted veg. Pizza dough is surprisingly simple and our dough uses only 4 ingredients. This pizza is the perfect size for 1 person, but simply double up the recipe to serve 2. This pizza is great with either our Simple Homemade Hummus recipe for a subtle flavour, or try using our Smoked Hummus recipe for a more intense depth of flavour!
This recipe uses Mellow Yellow Rapeseed Oil which is low in saturated fat and high in Omega 3, making this recipe ideal for a healthy and balanced diet. Simply click here to find your nearest stockist.
Serves 1
For the dough:
125g extra strong white bread flour
¼tsp salt
1tbsp Mellow Yellow Rapeseed Oil
75ml tepid water
For your topping:
2tbsp hummus (Try our Simple Hummus recipe, or our Smoked Hummus recipe)
Roasted vegetables – approx. 350g
Preheat your oven to 230°C/210°C fan and put a baking tray in the oven to get hot.
In a large mixing bowl, mix all dough ingredients together using your hands. Once combined, knead until smooth and no longer sticky. It should be quite sticky at first but the more you work it together, the less sticky it will become and should turn into a small ball of dough.
Leave covered for around 30 minutes, or up to a few hours if you are not ready to cook your pizza yet.
Roll out your dough on floured greaseproof paper. Spread the hummus over the base and cover with roasted vegetables.
Slide onto a tray and transfer to the hot tray in the oven.
Cook for 10-12 minutes.
