Sweet Potato Wedges

Sweet potato wedges are quick and simple enough to make anytime, delicious, healthy and rather moreish! We love sprinkling ours with smoked paprika as it adds a wonderfully smoky flavour that words so well with sweet potato. Enjoy these as part of a quick mid-week meal or alongside steak for a more special evening, they’re so versatile and work so well in so many meals we’re sure you’ll make these over and over again.

Serves 2
2 large sweet potatoes peeled and cut into wedges
1 tablespoon Mellow Yellow Rapeseed Oil
Freshly ground black pepper
Sea salt
½ teaspoon smoked paprika


Preheat the oven to 200ºC. Place the sweet potato wedges into a roasting tin. Season with salt, pepper and smoked paprika. Then drizzle over 1 tablespoon Mellow Yellow Rapeseed Oil. Toss the wedges around in the oil and seasoning to thoroughly coat them. Arrange them in the tin so that they are not overlapping each other. Bake in the oven for 20-25 minutes, until softened and browning.
