Speedy, easy, and oh-so tasty, this delicious sun dried tomato pesto is a great all-arounder that works brilliantly with all sorts of dishes. From pasta to toasties, pies, and sandwiches, it’s packed with gutsy flavours to make any dish sing.
Don’t be tempted to skip toasting the nuts here – it unlocks another level of flavour that really elevates this pesto.
● Juice of 1 lemon
● 60g pine nuts – toasted in a dry pan with a little sea salt
● 50g sun dried tomatoes
● 50g parmesan cheese, grated
● 2 large cloves garlic, minced
● Handful of baby basil
● 50ml Mellow Yellow Cold Pressed Rapeseed Oil
● 20ml Mellow Yellow Cold Pressed Chilli Oil
● Salt & pepper to season
1) Place all the ingredients in a blender until smooth.
2) Spoon into a bowl, top with some extra pine nuts, grated parmesan and a drizzle of extra chilli oil.
