1tbsp apple cider vinegar
1tbsp honey
1 small clove of garlic, crushed
1tbsp Mellow Yellow Rapeseed Oil
Salt and freshly ground black pepper
300g sprouting broccoli
100g feta, crumbled
50g almonds, roughly chopped
Blanch the broccoli in boiling water for 2 minutes and then refresh in very cold water.
Toast the roughly chopped almonds in a dry frying pan until golden and fragrant.
In a large bowl, mix together the apple cider vinegar, honey, crushed garlic. Then add the Mellow Yellow Rapeseed Oil and mix again.
Add the broccoli into the bowl and toss in the dressing to thoroughly coat. Place in a serving dish and sprinkle the crumbled feta and toasted almonds on top.
