Spinach and Goat’s Cheese Pizza


Anyone can make pizza from scratch using our simple and delicious recipe for Spinach and Goat’s Cheese Pizza. Pizza dough can be surprisingly simple and our dough uses only 4 ingredients, you can’t say easier than that! The combination of spinach and goat’s cheese for the topping works really well and creates a flavoursome meal. This pizza is the perfect size to create a single person pizza, so to serve more people, just increase the numbers of pizzas you make, then you can give each person their own, whole pizza!

Ingredients

Serves 1

For the dough:
125g extra strong white bread flour
¼tsp salt
1tbsp Mellow Yellow Rapeseed Oil
75ml tepid water

For your topping:
2tbsp tomato pizza topping sauce
70g spinach, wilted (blanched fresh or defrosted frozen)
50g goat’s cheese
60g mozzarella, grated


Method

Preheat your oven to 230°C/210°C fan and put a baking tray in the oven to get hot.
In a large mixing bowl, mix all dough ingredients together using your hands. Once combined, knead until smooth and no longer sticky. It should be quite sticky at first but the more you work it together, the less sticky it will become and should turn into a smooth ball of dough.
Leave covered for around 30 minutes, or up to a few hours if you are not ready to cook your pizza yet.
Roll out your dough on floured greaseproof paper. Spread the tomato pizza topping over and place little balls of spinach randomly over. Add crumbled chunks of goat’s cheese and cover with the grated mozzarella.
Slide onto a tray and transfer to the hot tray in the oven.
Cook for 10-12 minutes.
