Makes 2 sandwiches
3 rashers smoked bacon, chopped
1 tablespoon Mellow Yellow Oil
handful cold cooked chopped turkey or chicken
1 generous tablespoon homemade mayonnaise
4-6 leaves of little gem lettuce
4 slices bread (we love sourdough for this sandwich)
freshly ground black pepper
Heat a pan on a medium heat, add a drizzle of Mellow Yellow and then fry the chopped bacon until crispy. Remove the bacon from the pan leaving as much oil in the pan as possible. Place the bacon in a small mixing bowl. Pan fry the slices of bread in the bacon infused oil on the outside side (one side only) until golden. Add the turkey to the bacon followed by a spoonful of homemade mayonnaise, season with black pepper and stir well. On the serving plate, place one slice of bread browned side down, add leaves of little gem lettuce and spoon on the turkey mayonnaise filling. Top with the other slice of bread browned side up. Enjoy!
