Roast Parsnips

So simple but so delicious, roast parsnips are a key part of any roast dinner. Serves 4

400g (peeled weight) parsnips
2 tbsp Mellow Yellow Rapeseed Oil
Pinch of salt


Preheat your oven to 180°C. Peel your parsnips, cut of the top and end and cut each parsnip into quarters lengthways. Place in a roasting dish, drizzle with Mellow Yellow Rapeseed Oil, srpinkle with salt and toss to coat. Roast for 30 minutes, turning halfway through cooking.
