This Quinoa, Kale and Feta Salad is a fantastic summer salad for a BBQ, al fresco lunch or even for a light dinner on a warm evening. We like using a Red & White Quinoa and Bulgar Wheat mix, but feel free to use your favourite grain, this salad is great for ingredient swaps, depending on what you’ve got. Using kale in this salad is great for vitamin C and K, plus adds a deep, earthy flavour to this salad which works so well with the sharp feta and Honey & Mustard Dressing.

250g Red & White Quinoa & Bulgar Wheat Mix (we use the precooked pouches, but use your favourite grain and prepare according to packet instructions)
1 Avocado, cubed
50g Feta
1 Yellow Pepper
1 tbsp Farrington’s Mellow Yellow Rapeseed Oil
½ Red Onion, thinly sliced
100g Kale, stems removed and roughly torn
2 tbsp Farrington’s Mellow Yellow Honey & Mustard Dressing
Serves 2.
Slice your yellow pepper and put it into a roasting dish, drizzle with Farrington’s Mellow Yellow Rapeseed Oil, toss to coat and roast at 200°C (180°C) fan for 30 minutes or until soft.
To assemble your salad, start with the quinoa, then top with kale, avocado, sliced red onion and roasted yellow pepper. Crumble feta over and drizzle with Farrington’s Mellow Yellow Honey & Mustard Dressing. Toss to coat and enjoy!
