Halloumi and Chickpea Salad with Chilli Mango & Lime Dressing

We love to enjoy this delicious refreshing aromatic salad for lunch or as a barbecue side. The combination of tasty Halloumi and our spicy Mellow Yellow Chilli Oil with the zingy lime and mango dressing is a real winner!

This recipe uses our Mellow Yellow Rapeseed Oil which is low in saturated fat and high in Omega 3, making this recipe ideal for a healthier and balanced diet. It also uses our Mellow Yellow Chilli Oil, with just the right amount of chilli flakes infused into our cold pressed rapeseed oil, this chilli oil is just the thing to pep up pizzas and pasta, spice up a salad or salsa or give gusto to meat and fish.

Mellow Yellow Chilli Oil
1 pack Halloumi sliced (we found British halloumi style cheese)
1 red onion halved and thinly sliced
200g cherry tomatoes halved
1 can chickpeas drained
200g spinach leaves
Juice of 1 large lime
1 tablespoon mango chutney (we love Geeta’s)


To make the deliciously fragrant dressing, place the freshly squeezed lime juice in a medium sized bowl with the mango chutney and then a give good stir to combine. Give the chilli oil a good shake to release those lovely chilli flakes and add 2 tablespoons then give the dressing another thorough stir to finish.

Add the tomatoes and onions to the dressing tossing them around to thoroughly coat them, they’ll marinade nicely while you fry the chickpeas and cheese.

Heat up your pan and drizzle in some chilli oil and fry your chickpeas until golden brown then leave them to cool.

Add another drizzle of chilli oil to the pan and then fry the cheese on a medium high heat on both sides until it starts to brown.

To assemble the salad start with a bed of spinach, then the fried chickpeas, followed by the tomatoes and onions with the dressing and finally top with the halloumi.
