Crispy Roasted Parmesan Carrots went viral, so we made them and now we know why! They’re an absolute taste sensation, you have to give them a try! The combination of smoky and slightly spicy seasoning with the cheesy crispy parmesan crust are a match made in heaven.

450g carrots (peeled, halved and sliced lengthways)
2-3 garlic cloves (crushed)
60g parmesan
2 tbsp Mellow Yellow Rapeseed Oil
1/2 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp mixed herbs
Salt to taste
Preheat oven to 190°C fan.
Start by peeling the carrots, cutting them in half and then slice lengthways.
To a large bowl, add 2 tbsp Mellow Yellow Rapeseed Oil, crushed garlic, parmesan, smoked paprika, cayenne pepper, mixed hers and a pinch of salt. Stir well to combine. Add the carrots and toss to fully coat them in the seasoning.
To a small bowl, add the remaining parmesan and press each carrot (flat side) onto the parmesan and place them on an oven proof tray, parmesan side down.
Roast in the oven for 15 minutes at 190°C fan.
Enjoy with a sriracha and yogurt dip!
