Chorizo Pizza with Manchego, Mozzarella and Red Pepper

A pizza for fans of spice, our Chorizo Pizza with Manchego, Mozzarella and Red Pepper is full of bold flavours and drizzled with Mellow Yellow Chilli Oil for a warm hit. We’ve added fresh mozzarella to this pizza as the creaminess is perfect to cut through the heat of the chorizo and chilli oil. Plus finishing the pizza with shavings of manchego adds a touch of saltiness to season the pizza at the very end. Pizza dough can be surprisingly simple and our dough uses only 4 ingredients, you can’t say easier than that! This pizza is the perfect size to create a single person pizza, so to serve more people, just increase the numbers of pizzas you make, then you can give each person their own, whole pizza!


This dough uses Mellow Yellow Rapeseed Oil which is low in saturated fat and high in Omega 3, making this recipe ideal for a healthy and balanced diet. Simply click here to find your nearest stockist.


Serves 1.

For the dough:
125g extra strong white bread flour
¼tsp salt
1tbsp Mellow Yellow Rapeseed Oil
75ml tepid water

For your topping:
2tbsp tomato pizza topping sauce
50g fresh mozzarella, sliced
Few slices of Romano red pepper
Few slices of chorizo
Few slices of green chilli, deseeded
60g grated mozzarella
Manchego cheese, few shavings
Mellow Yellow Chilli Oil, drizzle


Preheat your oven to 230°C/210°C fan and put a baking tray in the oven to get hot.
In a large mixing bowl, mix all dough ingredients together using your hands. Once combined, knead until smooth and no longer sticky. It should be quite sticky at first but the more you work it together, the less sticky it will become and should turn into a smooth ball of dough.
Leave covered for around 30 minutes, or up to a few hours if you are not ready to cook your pizza yet.
Roll out your dough on floured greaseproof paper. Spread the tomato pizza topping over the dough and cover with your mozzarella slices, Romano red pepper, chorizo and green chilli, spacing all the ingredients out over the pizza. Sprinkle the grated mozzarella over.
Slide onto a tray and transfer to the hot tray in the oven.
Cook for 10-12 minutes.
Sprinkle over the Manchego cheese shavings and add a drizzle of Mellow Yellow Chilli Oil.
