Chocolate and Banana Muffins are a great way to use up the rest of those bananas and to bake. An easy recipe to do with the children.
2 ripe bananas (mashed)
110ml Mellow Yellow Rapeseed Oil
1 large egg
150g unrefined caster sugar
225g self raising flour
50g cocoa powder
100g dark chocolate chips (dairy free if required)
5 tbsp boiling water
Preheat the oven to 180°C (fan) and line a muffin tin with 12 cases.
In a large mixing weigh in the cocoa powder and add the 5 tbsp boiling water, beat to form a smooth paste. Stir in the mashed bananas, add the oil, egg and sugar, beat thoroughly to combine. Finally stir in the flour and chocolate chips and spoon the mixture into the prepared muffin cases.
Bake in the preheated oven for 20 minutes until well risen and springy to touch. Remove muffins from the tin and cool on a wire rack.
