Go Mexican with your pancake choice and enjoy as an evening meal or scrumptious lunch. Chicken Fajita Pancakes are easy to make a really give a twist built from a pancake.
For the batter…
100g/4oz plain flour
Pinch of salt
1 free range egg
300ml/half pint of milk
1 tsp Mellow Yellow Rapeseed Oil per pancake
For the filling…
1 chicken breast, thinly sliced
1 red pepper, chopped
1 onion, chopped
1 tbsp of fajita spice mix
1 tbsp guacamole
1 tbsp sour cream
To make the pancakes…
Place the flour into a mixing bowl. Crack an egg into the flour mixture and add a pinch of salt. Next, add a little of the milk and start to mix together the ingredients into a thick smooth paste. Gradually add the milk a little at a time, mixing well to create a smooth batter.
Heat the pan on a medium heat then add the Mellow Yellow Rapeseed Oil. When the oil is hot pour some batter into the centre of the pan and gently swirl to the edges to create an even thin pancake. Cook the pancake on one side for around a minute. Flip over and cook for a further minute, or until golden brown.
For the filling…
Prepare your chicken and vegetable ingredients. Heat the Mellow Yellow Rapeseed Oil in a frying pan or wok. When the oil is hot, add your chicken and stir fry for a couple of minutes. Then add the pepper and onion, sprinkle over the fajita spice mix, and stir through the vegetables and chicken, cooking for a further few minutes and until the chicken is cooked through thoroughly.
Add the spicy mixture to your pancake and top with the guacamole and sour cream.
