We’ve gone for peppers, courgettes and mushrooms, but you could use whatever vegetables you have in the fridge to create delicious BBQ Vegetables. Preheat your BBQ.
Cut your vegetables into large chunks or leave whole if the vegetables are smaller. Brush with Mellow Yellow Rapeseed Oil and season with salt and pepper. Place the vegetables on your BBQ and leave until cooked through. Turn halfway through to ensure vegetables are cooked evenly on both sides, making sure to keep an eye throughout the cooking so they don’t burn.
Aubergine is also delicious on the BBQ!
