When our friend Dom In The Kitchen announced he was publishing his book: Upside Down Cooking, our first question was, what shall we cook?! After much deliberation, we settled on this French Onion Soup Tarte Tatin. Not only is it a perfect example of the simplicity and flavour that can be achieved with Dom’s upside-down cooking method, it also paired perfectly with our new Blackberry Vinaigrette.
The gloriously golden shallots with nutty gruyere and golden puff pastry are an absolute treat and one we think you’ll want to repeat time and time again. So delicious!

Originating in Turin in Italy, around the 17th century, they were initially created as a way to provide a long, easily-eaten bread that wouldn’t go stale quickly. But we don’t think you’ll need to worry about these hanging around for too long – they are deliciously moreish.
