Sweet potato wedges are quick and simple enough to make anytime, delicious, healthy and rather moreish!
2 large sweet potatoes peeled and cut into wedges
1 tablespoon Mellow Yellow Rapeseed Oil
Freshly ground black pepper
½ teaspoon smoked paprika
Preheat the oven to 200ºC. Place the sweet potato wedges into a roasting tin. Season with salt, pepper and smoked paprika. Then drizzle over 1 tablespoon Mellow Yellow Rapeseed Oil. Toss the wedges around in the oil and seasoning to thoroughly coat them. Arrange them in the tin so that they are not overlapping each other. Bake in the oven for 20-25 minutes, until softened and browning.
