Plum Muffins Recipe


Use British plums when in season in this delicious and simple Plum Muffins recipe. With a pinch of cinnamon to add spice and soured cream to give the perfect muffin texture, you won’t be disappointed with this recipe. Our top tip is to chop up half the plums and mix into the muffin mixture. Enjoy these with a cup of tea in the sunshine, the perfect mid-afternoon treat!

Ingredients

280g plain flour
80g ground almonds
1tsp baking powder
Cinnamon, pinch
100g golden caster sugar
150g soured cream
2 eggs
zest of 1 lemon
80ml Mellow Yellow rapeseed oil
200g plums

Method

Combine your flour, ground almonds, baking powder and cinnamon. Stir well and put to one side. In a separate mixing bowl, add your sugar, soured cream, zest of 1 lemon and 2 large eggs. Stir together and pour in your Mellow Yellow rapeseed oil and mix. Add your dry ingredients to your wet and stir until fully combined. Spoon into 12 muffin cases and top with slices of plum. Bake at 160°C for 20-25 minutes. Leave to cool and serve.

Top tip: For extra flavour, chop up half of your plums and stir into your mix before baking.
