Classic Vinaigrette sautéed Prawn and Spiralized Courgette

Lightly Sautéed fresh prawns on a bed of spiralized courgette.

The perfect quick and easy starter or light lunch and deliciously healthy too.

Ingredients

1 courgette per serving
handful raw jumbo king prawns
Splash Mellow Yellow Rapeseed Oil
Splash Mellow Yellow Classic Vingairette

Method

Spiralize a courgette and sauté very lightly on a medium heat for a couple of minutes in a frying pan or wok with little mellow yellow rapeseed oil then add a splash of classic vinaigrette. Place the courgette on the serving plate and sauté the raw prawns until pink in the same way with a little oil then the vinaigrette. Serve the prawns on top of the sautéed spiralized courgette.
