Butternut Squash and Chilli Dip


Roasted butternut squash in chilli oil, mixed with mayonnaise makes a moorish and super healthy butternut squash and chilli dip.

Ingredients

1 butternut squash (medium)
1 tbsp Mellow Yellow Chilli Oil
Salt & pepper to season
2 level tbsp mayonnaise (or try our homemade mayonnaise recipe)

Method

Preheat your oven to 180°C.
Peel and chop the butternut squash and drizzle the chilli oil into an oven dish. Add the butternut squash to the dish and season with the salt and pepper to taste. Toss the butternut squash until it is covered in the chilli oil and even out on the dish. Pop into the oven for 40 to 50 minutes, until slightly browning and soft in the middle. Leave to cool and mash. Mix the mayonnaise into the mixture, serve and enjoy!
Delicious served with quartered toasted soft wholemeal tortillas.
