Theres nothing boring about this broccoli, an explosion of flavours, cheesy, nutty, cirtus and fresh. Lightly roasting tender stem broccoli retains the goodness, keeps its lovely green colour and wonderful texture. Delicious!
500g tenderstem broccoli
2 cloves garlic peeled and thinly sliced
2 tablespoons Mellow Yellow Rapeseed Oil
Freshly ground black pepper
1 lemon, finely grated zest and juice
3 tbsp roasted pine nuts
35g Parmesan shavings
Preheat the oven to 190°C.
Place broccoli and garlic into an oven proof dish. Season and drizzle with a generous tablespoon of Mellow Yellow, toss to coat thoroughly. Roast for 20-25 mins until slightly tender. Meanwhile combine the lemon juice, zest and 1 tablespoon oil. When the broccoli is ready, immediately drizzle with the lemon mixture, sprinkle with Parmesan and pine nuts and toss to combine. Serve hot.
