Theres nothing boring about this broccoli, an explosion of flavours; cheesy, nutty, citrus and fresh. Lightly roasted tender stem broccoli retains the goodness, keeps its lovely green colour and wonderful texture. Delicious!
500g tenderstem broccoli
2 cloves garlic peeled and thinly sliced
2 tablespoons Mellow Yellow Rapeseed Oil
Freshly ground black pepper
1 lemon, finely grated zest and juice
3 tbsp roasted pine nuts
35g Parmesan shavings
Preheat the oven to 190°C.
Place broccoli and garlic into an oven proof dish. Season and drizzle with a generous tablespoon of Mellow Yellow, toss to coat thoroughly. Roast for 20-25 mins until slightly tender. Meanwhile combine the lemon juice, zest and 1 tablespoon oil. When the broccoli is ready, immediately drizzle with the lemon mixture, sprinkle with Parmesan and pine nuts and toss to combine. Serve hot.
